Monique and the Mango Rains: Two Years with a Midwife in Mali

2 medium onions
2 large orange or red bell peppers
2 T oil
3-4 cloves garlic
28 oz. canned dice tomatoes
8 cups of stock
¼ t pepper and ¼ t crushed red pepper
½ C rice
1 & 1 ½ c cooked chicken
2/3 cup peanut butter
Sauté first 4 ingredients. Add the next 3 items and simmer on low, uncovered for 1 hour. Add the rice and simmer 15 minutes or until tender. Wisk peanut butter with some soup and add to the pot. Stir, serve and enjoy.
We had the chicken on the side for the vegetarian souls among us.
